Really... Blood: the last vampire was supposed to come out in team with a video game only released in Japan. We didn't get the full story till Blood+ came around.
Never understood peoples' attraction to Blood: the last vampire, what with its lack of ending.
As to the live action movie. Was a blast. OMG when that vampire transformed I almost died. Laughing. But bloodshedding in the movie was nice. ^^

If nobody has mentioned it yet.. the OAV 7 part El Hazard 1 was awesome... I didn't really bother with El Hazard 2...but the first one was SICK...such a good movie
Vandread: was entertaining and the ending was rather enjoyable as it brings everything together full circle.
Nyan Koi!: Pretty funny, haven't checked to see if they added any more, though they seem to hint at a 2nd season at the end of the last episode.
Strongest Disciple Kenichi: good fighting and equally good comedy
My Bride is a Mermaid: Funny, though it tends to get outlandish really quick which can be annoying.
Fairy Tail: Seemed pretty true to the manga, only watched first few eps since I've followed the manga and don't feel compelled to re-watch the series.
There are more but got stuff to do...lol

Fairy Tale i'd imagine would be less tolerable for one who has read the manga.

another one I haven't mentioned that hasn't mentioned on this site would be Night Head Genesis, if you like the whole psychic thriller deal you will like the anime.

Peacemaker Kurogane - was pretty nice, developed well and very unique characters
Samurai Champloo - Great to say the least
Dokkoida - Funny super hero anime
DearS - Good sci-fi/not too gushy romance comedy
King of Bandits, Jing - Loved this series mainly because each episode is its own story without needing to watch an entire series to get what's going on, movie was killer too
Tenchi: GXP - Actually enjoyed this more than most of the Tenchi series, fresh characters and cameo appearances of original (though not original VA's kinda disturbed me...)
Dual - Nice short sci-fi mecha/comedy/light romance series (watch Tenchi: GXP and you'll see a connection there, though may not be intentional)
Those Who Hunt Elves - decent series, good for a laugh or two
Air Gear - Great series...though they kinda copped out and only did short section of the entire story, so once you're grabbed by what's happening you need to read the manga to get more story.
Gun X Sword - from what I've seen of it, lot of action and comedy though must not have been too popular because it was hard finding the new DVD releases so I gave up on the series.
A side-story OVA set in the UC Gundam timeline, chronicling a hidden war involving the increasingly corrupt Empire of Aht-... I mean Earth Federation vs. the ghostly remnants of a vengeance-fueled stray Ephram... Zeon fleet.

The series is set in the modest town of Suiten, located in a remote mountain region in the island of Kyūshū. Three high school boys who have their own traumatic encounters in their childhood, learn about the strange occurrences happening at Suiten. Together, they investigate the strange happenings by entering the Unseen World, a parallel world where no humans can enter. However, the three boys accidentally end up entering the Unseen World, but realize that the Unseen World is the only way to find the answer to their horrible childhood. As soon as the boys begin to understand the existence of the Unseen World, ghosts and paranormal occurrences appear in the real world, spreading through Suiten, and the local priest and especially his daughter, become involved in the occurrences. The priest's daughter, having been born with the ability to see ghosts, is possessed. She doesn't have a traumatic childhood like the boys; however, she is ignored in the society. When the boys (including the minor characters) find out that the priest's daughter is going to become a 'saniwa' (one who judges a god), they take action to get the girl back.

In the not too distant future androids have come into common usage. Rikuo, who has taken robots for granted for his entire life, one day discovers that Sammy, his home android, has been acting independently and coming and going on her own. He finds a strange phrase recorded in her activity log, "Are you enjoying the Time of Eve?". He, along with his friend Masaki, traces Sammy's movements and finds an unusual cafe, "The Time of Eve". Nagi, the waitress, informs them that the cafe's main rule is to not discriminate between humans and androids. Within the cafe androids do not display their status rings, and, when patrons depart, the door is automatically locked for two minutes to prevent someone from following them to discover their true nature.
The first few episodes involve conversations between Rikuo (usually accompanied by Masaki) and the cafe regulars: the bubbly Akiko, child Chie and her elderly guardian, the lovers Koji and Rina, and others. These conversations make frequent allusion to Asimov's Three Laws of Robotics, often highlighting surprising interpretations of those laws, some of which form apparent loopholes. The overarching plot involves the beginnings of independence displayed by the androids, what they do with that independence within the bounds of the three laws, and what motivates them. Secondary plots involve the individual stories of each android the protagonists encounter in the cafe, and how they come to discover which patrons are androids and which are not.
an (award winning) anime movie not mentioned in this thread but is stunning none-the less is one called Paprika.
Elfen Lied: Well, I'm sure you've gotten this one a kajillion times so I won't elaborate on this one.
Clannad: It's an anime about FRIENDSHIP and FAMILY and LOVE except it's actually good.
Higurashi no Naku Koro ni: Psychological thriller, horror, murder mystery-esque kind of anime. It's basically a show about how this group of friends slowly goes crazy and starts killing each other. It's set up in "arcs" that are really like time loops: each arc starts off exactly the same, but the choices the characters make have different effects on the results. And then everything resets again. One of the girls of the group is aware of the vicious cycle of torture and tries to obtain the "happiest ending" for her friends by leading them to do different things and prevent tragedy. It's creepy at first, but in the long run it's an anime about friendship. (This anime is quite gory though)
Umineko no Naku Koro ni: Murder mystery and fantasy combination. It's a lot like "And Then There Were None" by Agatha Christie, but there is a supernatural element. It is an adaptation of the famous Japanese visual novels of the same name. I won't elaborate much more (for the sake of preventing spoilers) but the story in this anime is nothing short of genius. It follows the "time loop" pattern of Higurashi (it's by the same author) and the way it's set up it actually breaks the fourth wall, a lot. I can't really explain it: you'll just have to watch it. As an adaptation, a lot of the original material is lost, but the anime is still good. If you like thinking and deducing, then this is about as good as it gets. I promise. (There's lots of gore though, so take care)
If you enjoy watching Swords, magical powers, Fun Story line, Sex, people talking to each other, and many other weapons and tons of mythical beasts with a heavy interest in greek myths. Oh my, you have to love this one show, Called Final fantasy 11, i watch it nonstop
