It's weird I play as a rogue in most games where choice matters and such. I like planning out my routes and a stealth ability makes that an easy option.

Stealing: Only do this for quests that appear to be for a good cause.
Breaking and Entering: Same as stealing.
Assassinations: Same as stealing.

When it comes to fights that I do get into while on the stealth character I'm totally ruthless. Kill them all in the most effective and smoothest way possible.
