People usually destroy it with lemon juice and stuff like that.
Lemon juice ruins everything it ever has ever touched in the history of lemon juice. ^ This.
Although when I think of lemon juice and how people use far too much, seafood comes to mind.

you only need a light spritzing of lemon juice for anything seafood related.
Otherwise you ruin 1. the fish, and 2. the lemon, and 3. any relationship based on ability to cook

I'm pretty sure they just use lemon juice to cover up the fact that they don't use fresh fish. Unfortunately, that's usually the case.
Or they overcook it, and douse the charred remains with lemon juice or ketchup.

I'm not a huge fish fan. I only like shrimp, fried and raw, and calamari.
When I see people douse their squid in lemon juice... ughh!

Fresh fish doesn't give off any odors, good or bad.
Anyone who's worked with fish should know this. Unfortunately 90% of people don't believe this when you tell them, and honestly think that a bad smelling fish is actually fresh, when they are really being sold an old decaying fish.

Replace fish with squid and I'm right there with you. It basically applies to any and all kinds of seafood, so not just fish.
You can also tell when shellfish have gone bad as well, though more noticeably than just simple scent. Although you're more likely to smell bad shellfish before you see *why* it's gone bad, or the other signs.

imo I doctor up my seafood sometimes, but overall I eat it for the texture of the food. That slight mixture of soft and snapping when you bite into the shrimp, using your front teeth to snip it off at the tail. That my friend is good eating.
On that note, I am feeling black tiger shrimp tonight...

As far as cooking with lemon juice - it *has* to be fresh. Concentrated lemon juice in bottles is meant to be used very sparingly. Like... half a teaspoon or less. Or spritzed for light flavor.
And the only time I use lemon juice in cooking, is super rare when I want something to taste the way *I* want it to.
But I spent 3 years learning to cook, bake, meal planning, cost cutting (making own soup stocks sauces) in high school. Hot foods, cold foods, practical work, and theory work (theory being written work, not *actual theories*)

I pinch it right at the "line", not sure what the official name of it is. That way it's a clean removal with zero waste.
I hate when cooks don't bother removing the tail. It's like, what do you expect me, your customer, to do? Put my own hands in my own food and remove the tail off of all the shrimp you mixed up in here? I have to spend 5 minutes picking apart my food just to do your job?

If I can get away with using lime juice I will, but lemon juice just has this negative taste for me now. I can't do it. I don't blame you. Most "cooks" end up being lazy, because they end up working for a lazy employer who lets them get away with butchering what should be a pleasant meal.
Also, lime juice ends up working better than lemon for seafood. (personal conjecture)

I haven't ever tried lime juice on it, I really like my seafood plain.
If I'm going to have cocktail sauce with shrimp, which I almost never do, it's going to be burn your mouth off fire sauce. Otherwise it just seems like ketchup on shrimp, but yea, plain seafood, or breaded, unless they overbread it then it just has a negative effect.
Plain seafood has such a pleasant taste and mouthfeel, to me anyways.

Most places also deep-fry a lot of their breaded products in dirty oil, or oil that is designated for certain things.
I've seen people deep-fry fries in a fryer meant for fish, and so on.
Or they'll wait days or more before changing the oil - which is a health code violation.
Also, while I'm not sure on the actual statistics, more people are said to become ill from improperly fried foods due to cross contamination, than anything else in the kitchen.

I've been thinking I should try to become a public health inspector.
I mean, there's a ton of ***that goes by unnoticed, or if it is noticed, gets completely written off by lazy, unmotivated people.
