They're not illegal. You're just not going to find them in most regions and you won't find raw milk cheese curds because
raw milk products are illegal in the US. They're pretty available in most of the Midwest and South but good luck finding them on the West coast.
I have seen "cheddar cheese curds" for sale here in the benighted west, but these are aged 60 days or more and therefore totally unsuitable for poutine.
They aren't raw milk and you don't need raw milk to make them but our laws say all cheese (cheese products?) must be 60 days old or older.
I can buy raw milk here in WA if I wanted to.
