my monitor will 'sleep' after a few minutes, when I go to wake it up it just blinks and blinks and blinks, then I get some weird gray/black bars on my screen... then it loads up my desktop as it was.

Disable sleep mode for both your monitor and pc. change power saver from balanced to performance.
