When you are gearing for acc, how do you math with acc <-> multi attack gear? Example: anchoret mantle is 20 acc while letalis is 15 acc but has 3% double attack, so aparently 3 da makes for the 5 acc given up. Another example: having 3 rings for an acc set: rajas (5 dex), eponas (3 da 3 ta) and mars ring (8 acc). Is just spreadsheeting to find the best combo or is there a rule to compare multi hits with acc pieces in order to build a proper acc set?

You try to maximize the average number of hits you land per round. When I opened the monk spreadsheet it had a set with 15% DA, 9% TA, and 1% QA plugged in, so I'll use those numbers as an example.
At capped accuracy, this set lands 1.34335*.95=1.2761825 attacks per round (you can use this spreadsheet to calculate average hits per round:
thread) Anchorite mantle has 5 more accuracy than letalis mantle, which can add 2.5% hit rate. Suppose you're in a situation where that would bring you to the cap (you're at 92.5% accuracy): this set lands 1.316308*.95=1.2504926 attacks per round whereas keeping the letalis mantle equipped would have landed 1.34225*.925=1.24259875 attacks per round.
You can do the same for Epona's vs. an 8 accuracy ring. With epona's: 1.34335*.91=1.2224485 vs. 1.260472*.95=1.1974484 without epona's. Is there ever a point where your accuracy is low enough to make the accuracy ring the better choice?
1.34335*acc=1.2640472*(acc+.04)
Solve for accuracy: acc=.04/(1.34335/1.2224485 -1) =60.835%. If something checks high evasion, switch the rings.
