It introduces an element of risk to the income of someone who is statistically unlikely to be a high earner (yes, some people can make bank off tips, but those are not the standard, and it's silly to think they would be).
Truth be told, I frequently overtip by more than a little trying to be fair.
the only thing that really matters is attentiveness of the waiter/waitress. the ones checking if I need a refill or anything else a couple times throughout the meal and actually come back with your stuff in a timely manner I tip well.
That *** who I asked for a refill and 15 minutes later when I've already finished my meal now and want the check is still nowhere to be found gets no tip.
They can have all the sourpuss i don't want to be here face on they want as long as they get my order right and are available throughout the night.

Anyone else always tip in cash? I'm not sure how tips work these days and how they dispense them later but I always feel if I CC them the actual person who served as the waiter/waitress doesn't get that full tip. They're the only one that deserves it damn you!
I haven't worked as a server/bartender since...oh wow, 2006...
But it used to be that you did a print out of your sales at the end of the night, cash owed would be listed and credit card tips. You would take your tips out of any cash you had received and then give the rest to the manager, if you didn't have enough cash they would reimburse you.
However (depending on where you worked) you also needed to tip out the hostess, bartender, and bussers based on total sales or bar sales.
So, no they don't get to keep the full tip, normally.
The last place I worked (when gas prices were high after Katrina) discussed passing on credit card charges (the mastercard/visa percent charges per transaction) to the servers. Not sure if some places started doing that, which is a load of crap. If some places did do that, then giving cash might be a better option.
In Alberta, as far as I know, all tips are shared based on a percentage base: Something like 70% for the waiter/waitress, and 30% goes to the back of house staff.
Granted, a Server does deserve more of the tip they get, if they get a tip for good service.
But servers in Canada get paid the same minimum wage as their kitchen counter parts, which is something like $10.10/hour in Alberta. Now, from personal experience, most restaurants and servers actually welcome repeat business from low/non-tippers (because they are more frequent, the low end being 10%) than those who visit far more rarely, but tip between 15-20%.
The only time I would expect a tip, in any business (due to personal experiences) is when I've gone out of my way to make sure the customer had an exemplary experience that is above and beyond what they expected.
Aside from that, I will tip a great server, even if the food is poor. I will tip the kitchen staff (with a note saying to do so) if the food is good, but service blows. If both the food and service blows, I just won't come back.
Edit: Should also mention, my entire family tips in cash.

This give the premise that somehow the young and attractive set the bar for tipping amounts and you have to make sure that you tip the old and the ugly just as much.
